Making a Great Ice Cream is easy; making outstanding ice cream requires much more care. There are three main factors to prepare exceptional ice cream.
1. The Mix: Find a natural cream, preferably made with Dairy fat, stay away from vegetable fat which ads a layer of fat in your mouth, also with natural sweetener, corn-based sweeteners or artificial sweeteners will add an aftertaste to your product, and finally make sure the mix has an excellent system to build up texture, this is a mix of emulsifiers and stabilizers to maintain the ice cream creamy and soft after being made.
2. The Flavor: When possible is preferred to use natural flavors than concentrated flavors; if you can't find natural use non-added natural concentrates; stay away from syrups with sugar added; you do not want to add more sweetness to your ice cream. Depending on the process of preparing your ice cream, you can consider using toppings (Brownie, Chocolate, Almonds, etc.) to add flavor and texture to your ice cream.
3. The Process: Pay attention to your process; depending on the machine, you do not want to add too little or too much air into your ice cream; if you are making Liquid Nitrogen Ice Cream or Rolled Ice Cream, you are not adding air to your mix, use just premium natural dairy fat creams. After the ice cream is ready and if you want to store it, make sure the storage temperature and display temperatures are in line to avoid ice crystals formation.
