How are fruit colors and flavors obtained?

Normally, to consume a food, it must have a pleasant appearance, aroma and taste.  Nature offers products that can be sweet, sour, salty and of an attractive color. Because farm and sea foods have a short shelf life in the vast majority of cases, a manufacturing process has to be added to extend their expiration date, have them available throughout the year and give added value to both the that makes, processes and consumes it. ​

​For this reason, different natural colorings and flavorings are added to our foods to imitate as far as possible the presentation (freshness and flavor) that the product should have.

Over time, the food industry has managed to acquire the colors and flavors of fruits and vegetables in a concentrated form to enhance the acceptance of its processed products.

A flavor is a substance used to provide or intensify the flavor or aroma of products, usually concentrated from fresh fruits and vegetables, which when added to a processed food gives it the specific consistency. Cataloging them as follows:

Natural flavors; they are a preparation obtained in various processes from vegetables or raw materials of natural origin and that are suitable for human consumption.

Artificial flavors; they are the result of the extraction of the flavor, smell of a natural food, to fix them to a processed food. Normally this concentrate maintains the pleasant flavor for longer.

Most of the dyes are obtained from fruit and vegetable extracts, deriving the primary colors from this process and the mixture of these gives us secondary colors as a result.

Colorants give or restore the pleasant appearance of food, this is done to maintain or promote the preference of the product among people. As an example we have the color red, alluding to that of the cherry, that when seeing the product of this characteristic color, we immediately imagine the fruit and we will know that the flavor will be very similar to that of a natural one.

Those called artificial, a transformation process is applied, maintaining the essence of the chosen fruit or vegetable. There are synthetic colors and flavors that are the result of mixing chemical substances that mimic the taste, aroma and appearance similar to the natural one. Fortunately, they are scarce, since the food industry and consumers prefer natural ones.
