Why batch pre-blending? Gourmet pastes are dense and fruit purees are thick — unlike liquid concentrated flavors, they need mechanical shear to emulsify. An immersion blender folds the flavor straight into the whole batch, guaranteeing full integration with no clumps and even color and taste in every serving.

Prepare your base mix

Reconstitute your gelato, ice cream, soft serve or frozen yogurt base following the mixing instructions on the product label. Dairy bases use water or milk, vegan bases use non-dairy milk. Whisk until fully dissolved.

Dissolve all powder before adding flavor.

Add the gourmet flavor by weight

Weigh your prepared cream and add the recommended dosage for the flavor (grams per kg of cream, shown on each product page). You can add more if you want a more intense flavor.

Dosing is by cream weight, not volume.

Blend with an immersion blender

Submerge a food-grade immersion blender into the batch and blend until the paste or fruit puree is fully emulsified into the cream — gelato, ice cream, frozen yogurt or soft serve — smooth, lump-free and uniformly colored.

No streaks or paste residue should remain.

Rest refrigerated, remix & use

Cover and refrigerate the flavored cream for 10 minutes. After 10 minutes, blend or whisk once more and it is ready to run in your batch freezer, ice cream machine, or soft serve / frozen yogurt machine.

Resting lets the stabilizers fully hydrate.

Pro tip: Start at the lower end of the recommended dosing range and taste-test a small sample. You can always add more in the next batch — but you can’t remove it once integrated. Adjust to match your menu signature.

Add the per-portion dose

Incorporate at service

Into the bowl with liquid nitrogen and mix (LN2), or pour onto the cold plate and chop/roll (rolled ice cream). The flavor folds in fully as you process.

Process until smooth and evenly colored.

Serve immediately

Plate or cup the finished portion and serve fresh, made to order. Repeat per serving, switching flavors with no leftover flavored batch.

For a 16 oz blended drink, dose by scoop rather than by weight. Build the cup with ice + water + Art of Blend frappe mix (60–80 g), then add 1 scoop (#16, ~57 g) of gourmet flavor and blend until smooth. Add a second scoop for a more intense flavor.
