Follow these six steps to prepare your N2 Gelato Premium Mix correctly every time.

Add water or milk
In a clean bucket, add 3.5 liters of cold potable water or 4.0 liters of milk for soft serve or 3.0 liters of water or milk for rolled ice cream and liquid Nitrogen ice cream.

Open one bag of the mix and dispense into the liquid while mixing with a wire whisk or immersion blender.

Mix thoroughly
Mix for at least 40 seconds until all powder has been completely dissolved.

Refrigerate to emulsify
Keep the mix in a refrigerator for 10 minutes to increase emulsification and improve texture.
