Reconstitute your gelato, ice cream, soft serve or frozen yogurt base following the mixing instructions on the product label. Dairy bases use water or milk, vegan bases use non-dairy milk. Whisk until fully dissolved.
Dissolve all powder before adding flavor.
Weigh your prepared cream and add the recommended dosage for the flavor (grams per kg of cream, shown on each product page). You can add more if you want a more intense flavor.
Dosing is by cream weight, not volume.
Submerge a food-grade immersion blender into the batch and blend until the paste or fruit puree is fully emulsified into the cream — gelato, ice cream, frozen yogurt or soft serve — smooth, lump-free and uniformly colored.
No streaks or paste residue should remain.
Cover and refrigerate the flavored cream for 10 minutes. After 10 minutes, blend or whisk once more and it is ready to run in your batch freezer, ice cream machine, or soft serve / frozen yogurt machine.
Resting lets the stabilizers fully hydrate.
Pro tip: Start at the lower end of the recommended dosing range and taste-test a small sample. You can always add more in the next batch — but you can’t remove it once integrated. Adjust to match your menu signature.
For made-to-order service, dose the gourmet flavor per individual 6 oz portion instead of pre-blending a whole batch — ideal for liquid nitrogen and rolled ice cream, where each serving is built fresh in front of the customer.

Each serving is a 6 oz finished portion (about 170 g) where the gourmet flavor is already incorporated — not added on top. Start from your neutral base for that single order.
One neutral base serves many flavors.
Of that 6 oz, about 4 to 17 g is gourmet flavor (see the quick reference above). Use the formula dosage g/kg × 0.17. Add a little more to taste if desired.

Into the bowl with liquid nitrogen and mix (LN2), or pour onto the cold plate and chop/roll (rolled ice cream). The flavor folds in fully as you process.
Process until smooth and evenly colored.
Plate or cup the finished portion and serve fresh, made to order. Repeat per serving, switching flavors with no leftover flavored batch.

For a 16 oz blended drink, dose by scoop rather than by weight. Build the cup with ice + water + Art of Blend frappe mix (60–80 g), then add 1 scoop (#16, ~57 g) of gourmet flavor and blend until smooth. Add a second scoop for a more intense flavor.

It is a concentrated gourmet paste or fruit puree, made to an Italian recipe in the USA, and it works across every frozen dessert technology: gelato, hard ice cream, soft serve, frozen yogurt, rolled ice cream, liquid nitrogen ice cream, whipping cream and frappes.
The recommended dosage is 80-100 g/kg of finished mix. For a batch, weigh your prepared cream and add that amount per kilogram of cream; you can add more for a more intense flavor. For made to order service in liquid nitrogen or rolled ice cream, multiply the grams per kg figure by 0.17 to get the grams per 6 oz portion. Always start at the lower end and adjust to taste.
There are two methods. Batch: reconstitute your base mix, add the gourmet by weight, blend with an immersion blender until smooth and uniform, rest refrigerated for 10 minutes, then remix and run it in your machine. Dolce Delizia gourmet flavors are concentrated pastes (nuts and Italian classics) and real fruit purees (berries and tropical). Store sealed in a cool, dry place at ambient temperature; no cold chain is required. Shelf life is up to 36 months (some fruit purees up to 24 months), so check the date on the pack. After opening, reseal and use within the timeframe on the label.
