2. The Step-by-Step Process

Follow these instructions carefully to create delicious, perfectly formed ice cream rolls.

Step 1: Prepare Your AussieBlends® Base Mix

Mixing Instructions:

• Pour 3.0 liters of cold water or non-dairy milk (for the vegan option) into a food-grade mixing container. Then, gradually add the entire bag of AussieBlends® mix (Dairy Mix, Vegan Mix, or Frozen Yogurt) while whisking continuously. Continue mixing for 45 seconds, or until the powder has completely dissolved. Afterward, for the best results, allow the mixture to rest in the refrigerator for 10 minutes at 5°C (41°F). Finally, just before use, whisk the mixture vigorously one last time for optimal emulsification.

Step 2: Prepare the Cold Plate

• Surface Cleaning: Sanitize the surface with a food-safe cleaner before using it.
• Temperature Check: Ensure the plate has reached its target temperature, which should be between -18°C and -21°C (-0.4°F and -5.8°F).
• Stabilization: Lastly, allow 15-20 minutes for the plate's temperature to stabilize fully.

Step 3: Master the Rolling Technique

Pour and Spread, work quickly since the cream is being frozen

• To start, pour about 5 oz of your prepared cream onto the cold plate.
  
• Immediately, use your spatula to spread the cream evenly across the surface in a thin, rectangular layer.
