How much Gianduia Bianca should I use?+
The recommended dosage is 80-100 g/kg of finished mix. For a batch, weigh your prepared cream and add that amount per kilogram of cream; you can add more for a more intense flavor. For made to order service in liquid nitrogen or rolled ice cream, multiply the grams per kg figure by 0.17 to get the grams per 6 oz portion. Always start at the lower end and adjust to taste.
How do I mix Gianduia Bianca into my product?+
There are two methods. Batch: reconstitute your base mix, add the gourmet by weight, blend with an immersion blender until smooth and uniform, rest refrigerated for 10 minutes, then remix and run it in your machine.
