In a clean bucket, add 3.5 liters of cold potable water or 4.0 liters of milk for soft serve, or 3.0 liters of water or milk for rolled ice cream, gelato and liquid nitrogen ice cream.

Add powder mix & flavor (if required)
Open one bag of the mix and dispense into the liquid while mixing with a wire whisk or immersion blender. To create flavored varieties, add either X-Flavors concentrated flavorings (2.5 oz / 70g per bag) or Dolce Delizia gourmet pastes & fruit purees (80–100g per kg of mix) at this stage.

Mix thoroughly
Mix for at least 40 seconds until all powder has been completely dissolved.

Keep the mix in a refrigerator for 10 minutes to increase emulsification and improve texture.

Per 1.5 kg bag, blend 1.5 kg of D057 powder with 3.5 L whole milk. D057 is a lean, no-added-sugar base, so the milk supplies the milk solids and a little fat it needs for gelato body. For a richer, denser scoop, replace 200 mL of the milk with heavy cream. No sugar to add — D057 is sweetened with erythritol and maltitol. Whisk for at least 60 seconds until smooth. One bag yields about 5 L of finished gelato.
💡 Pro tip: Flavor with sugar-free options only to keep the no-added-sugar claim — X-Flavors concentrated flavorings are the match. Avoid standard Dolce Delizia pastes here, as they add sugar.

Mature the mix
Let the mix mature refrigerated at about 4°C for 4 to 12 hours. The milk proteins and stabilizers fully hydrate and bind free water; in a lean, no-added-sugar base this cold rest is what builds body and holds back ice crystals, so the gelato freezes smoother and denser. Do not skip the cold rest.

Churn (Mantecazione)
Whisk again for 10 seconds, then pour into your Italian batch freezer (Finamac, Bravo, Carpigiani, Telme or Frigomat). Churn slowly for low air (20–35% overrun) and gelato density, extracting at -8°C to -12°C. A no-added-sugar mix can freeze a touch harder — the maltitol and erythritol help keep it scoopable.

Harden the gelato rapidly in a blast freezer at -30°C to -40°C. Fast freezing prevents large ice crystals from forming and locks in the smooth texture built during churning.
