In a clean bucket, add 3.5 liters of cold potable water or 4.0 liters of milk for soft serve, or 3.0 liters of water or milk for rolled ice cream, gelato and liquid nitrogen ice cream.
💡 Pro tip: Whole milk contains about 13% solids. Mixing with milk instead of water raises the total solids of your finished mix — for a richer, creamier, more indulgent result.

Add powder mix & flavor (if required)
Open one bag of the mix and dispense into the liquid while mixing with a wire whisk or immersion blender. To create flavored varieties, add either X-Flavors concentrated flavorings (2.5 oz / 70g per bag) or Dolce Delizia gourmet pastes & fruit purees (80–100g per kg of mix) at this stage.

Mix thoroughly
Mix for at least 40 seconds until all powder has been completely dissolved.

Refrigerate to emulsify
Keep the mix in a refrigerator for 10 minutes to increase emulsification and improve texture.
