In a clean bucket, add 4.0 liters of non-dairy milk for soft serve (oat, almond, coconut, or rice), or 3.5 liters of non-dairy milk for Italian gelato, rolled, hard frozen treat and liquid nitrogen ice cream.

Add powder mix & flavor (if required)
Open one bag of the mix and dispense into the liquid while mixing with a wire whisk or immersion blender. To create flavored varieties, add either X-Flavors concentrated flavorings (2.5 oz / 70g per bag) or Dolce Delizia gourmet pastes & fruit purees (80–100g per kg of mix) at this stage.

Mix thoroughly
Mix for at least 40 seconds until all powder has been completely dissolved.

Keep the mix in a refrigerator for 10 minutes to increase emulsification and improve texture.

Per 1.5 kg bag, blend 1.5 kg of S810 powder with 4 L of plant milk — oat, almond, cashew or soy. For soy (or dairy) milk, use 5 L, as the richer milk needs a little more dilution. The plant milk sets the fat and body: oat and soy give the fullest body, almond the lightest. Whisk for at least 60 seconds until smooth. One bag yields about 5.5 L of finished gelato.
💡 Pro tip: For richer, creamier vegan gelato, use a barista oat or full-fat cashew/coconut milk — the extra fat builds body. Flavor with vegan-compatible X-Flavors or vegan Dolce Delizia pastes.

Mature the mix
Let the mix mature refrigerated at about 4°C for 4 to 12 hours. The stabilizers and Inulin fibre fully hydrate and bind free water — in a plant-based, low-fat base this cold rest is what builds body and holds back ice crystals, so the gelato freezes smoother and denser.

Churn (Mantecazione)
Whisk again for 10 seconds, then pour into your Italian batch freezer (Finamac, Bravo, Carpigiani, Telme or Frigomat). Churn slowly for low air (20–35% overrun) and gelato density, extracting at -8°C to -12°C.

Blast freeze
Harden the gelato rapidly in a blast freezer at -30°C to -40°C. Fast freezing prevents large ice crystals from forming and locks in the smooth texture — especially important for a lean, plant-based mix.
