How to Use Ice Cream Mix in a Commercial Ice Cream Machine

Every commercial ice cream mix on this page is supplied as a powder and becomes a liquid ice cream mix in your own back room — you just add water. The four steps below are the same whichever ice cream machine you run. What changes is the machine, and what it makes.

The Four Steps
  1. Reconstitute the powder

    Whisk or blend the powder into cold water until it is fully dissolved. Each process uses its own reconstitution ratio, and the ratio for your process is stated on the product page for the mix you are using.

  2. Age the mix cold

    Rest the reconstituted mix at around 4 °C — cold, not frozen — for four to five hours before it goes near a freezer. Aging is what gives the finished dessert its body and its resistance to melting. Never skip it.

  3. Add flavor, then freeze

    Blend in gourmet paste or concentrated flavoring before freezing, then run the mix through your ice cream machine. The base is neutral by design, so the flavor you add is the flavor your customer tastes.

  4. Hold at the right temperature

    Hardening and serving temperatures differ by format. Scooped ice cream is hardened at −18 °C or colder and served warmer than that; soft serve is drawn and served straight from the machine.
